KARAKTERISTIK KIMIA HIDROLISAT PROTEIN DAN PENGUAT RASA DARI HASIL SAMPING FILLET IKAN KAKAP (Lutjanus sp) YANG DIHIDROLISIS SECARA ENZIMATIS

Abstract


Hidrolisat protein ikan merupakan produk yang dihasilkan dari penguraian protein ikan menjadi peptida sederhana dan asam amino melalui proses hidrolisis oleh enzim, asam, atau basa. Hidrolisis secara enzimatis menggunakan jenis enzim protease dapat dipilih dengan pertimbangan apabila hasil produknya akan digunakan sebagai bahan tambahan pangan. Tujuan dari penelitian ini adalah mengetahui kandungan kimia, nilai kelarutan, dan warna hidrolisat protein serta produk penguat rasa. Hidrolisat protein diproduksi menggunakan proses hidrolisis, filtrasi bertingkat, pengeringan, pencampuran bahan pengikat dan formulasi. Parameter kualitas hidrolisat protein dan produk penguat rasa ditentukan dengan menguji kandungan kimia, warna dan tingkat kelarutan di dalam air. Hidrolisat protein dan produk penguat rasa memiliki kandungan protein antara 9,49 - 11,37% (bk). Hidrolisat protein dan produk penguat rasa memiliki tingkat kelarutan antara 99,94 - 99,99%.Hasil uji warna menunjukkan hidrolisat protein memiliki warna lebih cerah dengan nilai L* 94,80 dibandingkan produk penguat rasa yang memiliki warna lebih gelap berspektrum hijau merah dengan nilai a* 1,32 - 1,84. Hidrolisat protein dan produk penguat rasa memiliki kandungan protein cukup tinggi serta asam amino yang lengkap, sehingga sangat baik digunakan sebagai bahan pangan fungsional yang berguna bagi tubuh.
